Creamy Cashew Nut and Tofu Spread

I use this creamy spread as a nutritious substitute for cream cheese.  Herbs, spices, garlic or caramelised onion can be added to vary the flavour.

Here’s the basic recipe I use:

Ingredients for base spread (add herbs/spices/garlic/onion as desired):

1 block of silken tofu (I use the Blue Dragon firm silken tofu which is found in a tetra pak in the oriental aisle of Waitrose)
1/4 cup ground cashew nuts
1/2-1 tsp salt and ground pepper, to taste

Method

  1. Blend all the ingredients together until smooth (I use a hand blender).  Any leftover spread can be placed in a sealable container and refrigerated for up to 5 days.
