tibits is a group of popular vegetarian restaurants that were launched ten years ago in Switzerland by three brothers – Reto, Christian and Daniel Frei – together with Rolf and Marielle Hitl (the owners of Hitl, the oldest vegetarian restaurant in the world according to the Guiness Book of World Records!)  In 2008 they opened the first UK tibits restaurant in Heddon Street (off Regent Street) in London.

To celebrate their 10th anniversary, last year they launched their first cookbook, tibits at home, which includes fifty of their favourite recipes.  Recently I was asked whether I would like to receive a copy of the cookbook to review.  I was delighted to accept the invitation.  While the book is vegetarian cuisine, many of the recipes are in fact vegan, which suits our family perfectly.

The book arrived the other day and I’ve thoroughly enjoyed reading it.  It’s one of those cookbooks that’s filled with stylish photography, making it a great pleasure to browse through.  The photographs were actually taken at the homes of four patrons of tibits and, in addition to the shots of food, you also get to glimpse into the beautiful, stylish homes of these Swiss families.

Whilst the book is described as ‘stylish vegetarian cuisine’, the authors emphasise that all the recipes are easy to make at home, which I was pleased to hear.  The recipes are organised by season, with an introductory paragraph that encapsulates the essence of each new season.  I do love cookbooks that are arranged by season but, to be honest, I’d happily eat the recipes in this book all year round!

One of the first recipes that caught my eye – cavatappi pasta with courgettes curry sauce – was in the Autumn/Fall chapter.  If you’ve been reading my blog for a while, you’ll know that my family are huge curry fans.  However, I must admit that we’d never tried curried pasta before.  I was intrigued to discover whether this combination worked.

Inspired by the tibits recipe, last week I made a curried pasta dish for the first time.  The family loved it!  In fact, it was such a hit that we chose to make it again this week.  We rarely eat the same meal twice in the same month, so this one is definitely something special! I loved how quick and easy to make it was too.

I’ve made the recipe below mild enough for small children but, if you prefer, you can increase the spice quantities to add more heat.  The tibits recipes calls for 50g freshly grated ginger (which equates to around 2 x thumb size pieces).  I used this amount the first time I made the recipe and it gave the dish a distinctly ginger-spiced flavour.  We love ginger but this amount could make the dish a little too spicy for some children.  The second time round, I halved the amount of ginger and Lil’ L preferred it.

There are many more recipes in the tibits cookbook that I’m looking forward to trying, including the vegetable jambalaya, red rice salad, coconut and peanut fritters, and goa curry.  All sound utterly delicious!

We ♥ Hemp & A Good Hemp Giveaway

If you’ve been following my blog for a while, you’ll have noticed that hemp seeds appear in a lot of my meals.  It crops up in breakfasts, lunches, dinners, smoothies and even hot chocolate!  I have huge respect for this super seed, both for its nutritional content and positive impact on the environment.

Though hemp comes from a variety of cannabis sativa, the plant contains extremely low levels (0.02% or less) of tetrahydrocannabinol (THC) (levels comparable to the amount of opium found in poppy seeds).  Here in the UK, it’s legal to grow industrial hemp for culinary purposes.

We ♥ Hemp
As a plant-powered family, we consume hemp seed as one of the main sources of our omega 3 intake (along with flaxseed, chia seeds and walnuts).  Since heat can destroy their valuable omega 3 properties, we tend to sprinkle hemp seed into our meals once they are prepared.  Until recently, I’d only ever used plain, shelled hemp seed so I was delighted when I was contacted by Braham & Murray (the company behind Good Hemp) and asked whether I would like to try their new range called ‘Good Seed’.  In addition to the plain variety, they’ve created three flavoured blends: Sweet Cinnamon, Asian Spices and Italian Herbs. All four of them are perfect for sprinkling!

I have to say that these products have been thoroughly tested by my family.  We’ve used at least one of the blends every day for the past month or so!  Here’s a rundown of our favourite ways to enjoy them.

The Sweet Cinnamon blend (hemp seed, ground cinnamon, sugar) has been sprinkled onto breakfast cereals, porridge, and blended into smoothies.

The Italian Herbs blend (hemp seed, coriander, salt, oregano, basil, garlic powder) has been wonderful for sprinkling into pasta dishes and on top of pizzas and soups…

The plain Shelled Hemp has been sprinkled into a whole array of breakfasts, lunches, dinners and smoothies.

We found that all four blends are also great for sprinkling into sandwiches and wraps.

As companies go, I really value Braham and Murray as they take great care to produce a quality product in harmony with the environment.  All their hemp is grown in the UK and is entirely herbicide and pesticide free.  They make use of the entire hemp plant, so nothing goes to waste.

The seed is used for food.
The straw is used to create sustainable building materials for Eco houses.
The fibre is supplied to BMW for the doors of 3 & 5 Series cars (the fibre reduces the weight per car by approximately 1kg, thus enabling fuel efficiency).

Valentines Raw Chocolate Giveaway!

Bath Lantern Parade & Christmas Market 2012

This week we’ve had heavy rainfall and high winds, and many areas within Bath are now flooded. Bathampton Meadows (pictured in my top banner) has turned into a lake and our garden is completely submerged under water. It’s an amazing spectacle! I’ve posted some pics on my FB page if you want to see for yourself.

However, these adverse weather conditions weren’t going to put us off attending the Lantern Parade and opening of Bath Christmas Market last night. It was raining and blowing a gale when we first ventured out. Fortunately, by the time the Parade kicked off, the rain had reduced to a fine drizzle. Good thing too as I don’t think the paper lanterns would have lasted very long in a deluge ;)

The Lantern Parade started at the Holburne Museum and made its way down Pulteney Street to the sound of Bath Samba Band. Everyone was in high spirits despite the weather.  I noticed that lots of people (me included) couldn’t help but add a little samba strut to our step as we made our way into the city centre ;)

The Parade ended at the Abbey, the site of the Christmas Market.

I just love visiting the Market at night. The sight of all those little wooden sheds lit up is so inviting :)

And who are these two characters? I’m not exactly sure but they were very entertaining. Lil’ L ‘high fived’ the … Snow Queen?

In addition to the parade, there were some awesome animated light projections on the Holburne Museum and Bath Abbey. These were the work of Transient Graffiti, a local community development project.  We enjoyed the animation whilst warming ourselves with veggie pasties from Pasty Presto (by far the best pasty shop in Bath in our opinion!)

It was a great night out and I’m so glad the rain died down so we could all enjoy it. About an hour later the torrential rain started again so we were very lucky indeed!

Raw Hot Chocolate Review & Giveaway!

Those of you that have been reading my blog for a while will know that I’m a HUGE fan of raw chocolate. I adore everything about it… its smell, its taste, not to mention its amazing array of nutritional properties.

It was Dan and Paula from Elements for Life that first introduced me to raw chocolate. After just one little taste of their Yummy Scrummy raw chocolate brownie (pictured above) I was hooked. I came away from their stall at Frome Green Fair with a raw chocolate making kit under my arm and a big smile on my face from having met such a lovely couple. No doubt the smile was also due in part to the kick of serotonin and other ‘feel good’ nutrients found in their raw choc ;)   Honestly, it works that quick. A couple of bites and boom, I’m feeling warm and fuzzy all over.

So when I heard that Dan and Paula had created a range of raw hot chocolate powders, you can imagine how excited I became. I was extremely intrigued to find out what a raw hot chocolate would taste like.

As well as their original hot chocolate, they’ve also created a spiced blend, which contains cinnamon and nutmeg, and a fiery blend which has a smooth chilli bite. Both these new blends have won Taste of the West Awards this year.

All three hot chocolate blends are made with organic ingredients and, unlike most other hot chocolates, they contain no milk (which makes them perfect for those with dairy allergies and intolerances like me) and no refined sugars (which means they’re suitable for diabetics). Instead, they’re gently sweetened with coconut palm sugar (a low GI nutrient-rich natural sweetener).

A stint of heavy hinting on Facebook worked a treat ;) A few days later, Dan popped round to see me armed with a box of goodies. When I opened the box it felt like Christmas had come early! Inside were six shiny tins of raw hot chocolate as well as one of their newly launched hot chocolate mugs :)

For my first taste testing session, I invited my friend Joni to join me. I consider Joni to be a true expert when it comes to hot chocolate. Whenever we go out for coffees, she always orders a hot chocolate. She must have drunk hundreds of different blends in her life, so I was interested to find out what she thought of this raw, sugar free version. Lil’ L also wanted a piece of the action, so I set about making three cups of chocolate. For this session, we chose to try the original blend.

And what did we think? Oh my word it was good! Joni described it as “really smooth, with a great taste”. She mentioned that some hot chocolates leave an aftertaste in your mouth and a coating on your teeth (probably from the refined sugar), but this blend doesn’t have that effect at all. Often, hot chocolates are made way too sweet but, for us, this blend had the perfect level of sweetness.

Lil’ L loved it too and said “I can see why they say it’s so good!” The following morning when we went to a coffee shop Lil’ L ordered a hot chocolate but after a couple of sips he pushed it to one side and refused to drink any more, saying that it was horrible in comparison to the one we’d had at home!  See, even he’s hooked on raw chocolate now ;)   I’m really pleased he prefers it though as it’s way better for him.

The next testing session was for the spiced blend, and the tasters were M and I.  This blend has a deliciously warming cinnamon and nutmeg flavour that makes it the perfect comforting drink for the cold season.  I have to say that, of the three blends, this one is my number one favourite.

And, finally, we tested the fiery chilli. This blend contains Aji Orange Chilli Powder which is grown locally at The Wiltshire Chilli Farm. This raw hot chocolate has a fantastic flavour with a warming spicy kick to it. Perfect for all those chocolate chilli lovers out there!  I served this blend topped with Soyatoo Rice whipped cream and a sprinkling of raw chocolate shavings. Delicious!

So far, I’ve made raw hot chocolates with four different non dairy milksAlpro Almond Milk (sweetened version), Alpro Soya Milk (sweetened version), Kara Coconut Milk and Oat Dream Oat Milk.  All tasted delicious though it’s worth noting that the oat milk did add a hint of oat flavour to the hot chocolate.

On the back of the tin, there are instructions for two different methods for making the drink. I’ve trialled both methods and they both gave great results. Using the first method, I simply used a hand whisk to make the chocolate nice ‘n’ frothy. The second method involves whizzing the hot chocolate with an immersion (stick) blender. This was really effective and created a super frothy chocolate (as seen in the pics above).

During our first tasting session, Joni mentioned that these hot chocolates would make great Christmas gifts for chocolate-loving friends and family and she’s already planning to put an order in to Dan and Paula. I’ll be right behind her!
