Chestnut and Mushroom Bourguignon Pie (Vegan with Gluten Free Option)

In today’s post I’m sharing a recipe for a delicious pie that’s just perfect for serving in the cold weather months. It’s an adaptation of a recipe published by the Vegetarian Society back in 1995. We first tried this pie last month and it was a big hit with the family. Since then, we’ve already eaten it a couple more times as special weekend dinners. While it looks pretty impressive, it’s really easy to make and requires less than 30 minutes hands on time.

Cosy Mushroom Minestrone

My cookbook has gone to print! It was so scary hitting the ‘send’ button. In fact, it took me a good few hours to pluck up the courage to hit it. I was paranoid that I was going to send an old version my mistake so I kept checking and re-checking the file names. I was turning into a slightly scary, crazy woman but I finally took a deep breath and just hit the button. And while I’m waiting for it to roll off the printers in London, I’ve been having fun in the kitchen, trying out new ingredients and recipes.

One new dish that has been hugely popular in my house lately is this Cosy Mushroom Minestrone ❤️ With the weather cooling off and the evening’s start to draw in, these are the kinds of dishes that I start to crave. Warm, filling and super savoury. This is my idea of the perfect comfort food.

Chocolate Waffles with Crushed Nuts and Raspberries. Dairy free. Egg free. Vegan.

When it comes to weekend treat breakfasts, waffles are a firm family favourite. They are so easy to make and take very little time to prepare. We love experimenting with different ingredients and flavour combinations. I’ve already posted recipes for our Easy Vegan Waffles and Gingerbread Waffles and today, we’re sharing the recipe for our quick and easy Chocolate Waffles.

Quick and Easy Macaroni Cheese. Vegan Life Issue 10

When I was a kid, macaroni cheese was one of my all-time favourite comfort foods. Sadly this childhood favourite turned into the ultimate ‘discomfort’ food for me in my 20s, when my intolerance to dairy became acute. With almost instant flare ups of eczema, stomach cramps and joint pain, the pay off for indulging in this dairy-laden dish just wasn’t worth it.

It was probably a good ten years before I tucked into a cheesy pasta dish again. And it was thanks to the highly creative vegan food blogger community that I discovered how cheese sauces could be replicated using non dairy ingredients.

These past few years, I’ve tried a whole host of non dairy ‘mac n cheese’ recipes and have experimented with a few of my own. I now have a favourite self-devised vegan ‘cheese’ sauce recipe which I use for pasta dishes, which the family absolutely loves (and has hidden veggies inside!) but I’m always on the lookout for new ones to try. So when I saw the tantalizing macaroni cheese shot on the cover of November’s Vegan Life magazine, I couldn’t wait to check out the recipe.

I was intrigued to find that the ‘cheese’ sauce is actually a dry mix that you can make ahead of time and store in the pantry. It was devised by Miyoko Schinner (the blogger behind Artisan Vegan Life) and appears in her recently published book The Homemade Vegan Pantry: The Art of Making Your Own Staples.

The recipe sounded so simple to make. I couldn’t wait to give it a try! It’s dairy-free and gluten-free so this is a great dish to serve to anyone that’s vegan or  gluten / dairy intolerant. Continue reading
