Fresh Vegan Magazine Issue 3 & My Blog’s 3rd Year Anniversary

Wow, is it really June already? I can’t believe how quickly this year’s going! This month is a particularly special one for me… it’s the 3rd anniversary of my blog, it’s my birthday month AND I’ve had my first feature in a magazine!

When I started blogging three years ago, never did I imagine that I would be where I am today. It’s been such a joyful, rewarding process. Without a doubt, the most precious part of blogging has been the opportunities it’s given me to connect with beautiful, compassionate souls across the world (and yes, that most definitely includes you! )

As you may already know, this week saw the launch of Issue 3 of Fresh Vegan magazine. Sporting a fresh summer vibe, this issue is jam-packed with interviews, seasonal recipes, restaurant and product reviews, stunning photography, competitions and much more.

Yesterday, I read the magazine from cover to cover and it left me feeling both inspired and humbled…

…inspired by the passion and sheer hard work that the contributors, interviewees and Fresh Vegan team are dedicating to the promotion of compassionate, healthy, planet-friendly lifestyles…

…and humbled by the fact that I’d been invited to contribute to this issue. I still feel such a novice when it comes to recipe development, cooking, blogging, social networking, life in general. I’m still way down there on the learning curve, but I’ll keep plodding away at it. I just feel fortunate to have access to so many amazing role models

In Issue 3 of Fresh Vegan, I share two of my all-time favourite summer recipes: Malaysian Coconut Noodle Soup with Smoked Tofu (my family-friendly plant-based version of the traditional Malay soup Laksa Lemak)

and for dessert, Pina Colada Dairy-free ‘Cheese’ Cake. This is one of my favourite desserts ever! It’s a no-bake dessert and so simple to make!

For both recipes I’ve given the quantities in grams, ounces and cups so I should have everyone covered, whatever their measuring preferences 😉

    Many congrats on reaching 3 years – me too in May but I completely forgot about it!

    I don’t know which site I went on but I was able to read 114 pages of the magazine including your wonderful recipes and the photos are just fantastic! Well done!

    Can I say here how much I look forward to your posts, they are so friendly and interesting!

  2. Well done, Sharon. I remember you telling me that you were planning to start a vegan blog (many moons ago, it seems). How time has flown and how your contributions have improved and become more adventurous with each menu getting better than the last. Are you still doing your meditation classes at the school, and going to classes in Bath?

    1. So lovely to hear from you! And thank you for your kind words ♥ You know, I can hardly remember my life before the blog/FP/teaching. It seems like a totally different person… you know, I think it was! 😉
      I’m just finishing my 4th year of teaching the children’s workshops (I can’t believe I’ve been doing it that long!) Next week I’m taking a coach load of my students to the Buddhist Centre. They’re so excited! I’m still going to classes myself. We’ve finished the whole of Joyful Path and are now studying 8 Steps to Happiness. Such a beautiful book isn’t it? ♥ xx

    1. Thanks Kari! ♥ It’s an exciting time to be vegan/plant-based in England. The festivals are getting bigger and better, there’s loads of new vegan eateries and products cropping up and, as well as Fresh Vegan, I’ve just heard that a new vegan magazine will be hitting our shops in September! 😀

    1. Thanks Lauren! This cheesecake is one of my all-time favourites, and it’s so easy to make! Once the cashews are soft, it’s literally a case of blending and freezing. The dessert’s pretty large, but you could easily halve the mixture and make half a dozen individual desserts in silicone cupcake moulds. Keep them in the freezer and they’ll last at least a couple of months 🙂

      I also can’t believe how long it’s taken me to write the cookbook :/ I’m still really enjoying the process, but I just need to get it finished now. My mum’s all but given up on it ever materialising 😉
