It was my blogging friend Aimee Ryan’s 2014 publication that got me hooked on coconut milk ice cream. I’ve always been a big lover of ice cream, but the shop-bought varieties paled into insignificance once I’d had my first taste of home-made coconut milk ice cream.
If you’ve experienced itself, you’ll know just how delicious it is. The texture is silky smooth and creamy. The coconut flavour is so subtle that the ice cream can be flavoured a myriad of ways. Aimee’s recipe book has over 50 to choose from, including fruity, nutty, spicy, boozy, floral and dessert-inspired flavours. And, in addition to being vegan (and gluten-free), her ice cream recipes also happen to be cane-sugar free too. For this, my tummy is very thankful.
Coconut milk ice cream is simple to prepare and only requires a few minutes of ‘hands-on’ time. For over five years now, my Wednesday Workshop children have requested these cookies as their end of term treat. Who would have thought that a vegan wholemeal cookie would be such a hit!
I must admit, the children were a little surprised when I first admitted that they were vegan, but it didn’t deter them. To be honest, I got more cautious looks when I told them they were wholemeal, but even this wasn’t enough to put them off. They enthusiastically tucked into them, then proceeded to give me lots of lovely compliments. For this month’s entry to the Suma Blogger’s Network, I’m sharing a recipe for one of my all-time favourite snacks – Chocolate Rose Energy Balls ♥ They taste more like a decadent treat than a snack, yet they’re packed with nutrient-rich energy-fuelling ingredients.
Filled with wholegrain oats, nuts, dates and cacao, each ball provides a healthy does of protein, heart-healthy fats, slow release carbs, as well as vitamins, minerals and antioxidants. They are really satiating, so I find that just one is enough to fill me whenever I need an energy boost or afternoon snack.

When it comes to mince pies, for me, nothing beats home-made. Sure, my pies won’t be uniformly shaped and coloured like the factory-produced ones. And my stars are usually a little wonky. But hey, they taste REAL. Once you’ve tried home-made, I don’t think you’ll ever go back to shop-bought again.
If you’ve never baked your own mince pies before, you must give it a try. They’re incredibly easy to make. Even the pastry is a breeze.
The recipe I’m sharing today is for mini vegan mince pies. The size makes them perfect for serving with an ‘elevenses’ coffee or afternoon tea during the festive holidays. They’re small enough to not spoil your appetite, however, if you do fancy a second, you can tuck-in guilt-free as at least two minis is equivalent to one regular size pie.

Here in the UK, we’ve been experiencing an Indian summer. Blue skies, sunshine, warmth, walking around in short sleeves… I’ve been enjoying it for sure. And so has the garden. Typically winding down for Winter this month, gardens have suddenly burst into colour again. June roses are back in full bloom. I’ve never known this happen before.

Today I’m sharing my “go-to” recipe for chocolate cupcakes. This recipe has never left me down. My oven can be really temperamental when it comes to cake baking, but these cupcakes always turn out perfectly. They’re light, fluffy and deliciously moist.
I’ve made them numerous times for fundraisers and they always sell in a flash. None of the children at our local school are vegan, but they choose these cupcakes simply because they love them. It also makes me happy to know that the children with dairy allergies are able to join in. I often spot their mums making a beeline for me as I step through the school gate with my cake tin.
Next Friday is the annual Macmillan coffee morning here in the UK, which has now gained the status of the World’s Biggest Coffee Morning. Last year, the event raised a wopping £25 million for people affected by cancer.
