Book Launch Update, Events & Giveaways

So my book launched last Wednesday, and what a week it’s been! I’ve been truly overwhelmed by the response it’s received. Thank you so much to everyone that’s purchased the book so far and all the lovely messages you’ve been sending me. I can’t believe how quickly people have got stuck into it, and it’s been wonderful to see your all the pics you’ve been posting online.

Bit of the Good Stuff

Last Wednesday we had a launch event at the Rising Sun pub in Bath (kindly organised by my friend Vip). It was such an amazing night! ✨ So many people turned up (far more than I expected!) I didn’t personally know most of them, so it was great to chat and connect with these lovely people.

The photo below was taken while I was delivering a talk on the book (I’m the blurry person right at the back). I was terrified as I hate public speaking. I was a bit shaky and emotional in places, but I managed to get through it. Phew!

After the talk, the pub served a pasta dish from my cookbook and I had brought along some cakes and chocolate truffles for people to sample. Easy Vegan Pecan Pie

In today’s post, I’m sharing a recipe for an easy vegan pecan pie. This dish will be perfect for serving in the upcoming festive season. It looks impressive and slices beautifully.

Pecan pie hails from the southern US states. After a google search, I discovered that it’s traditionally made with eggs, butter, refined sugar and corn syrup. I decided to ditch all of these and use some of my favourite plant-based ingredients instead.

Easy Vegan Pecan Pie

For the crust, I use my ‘go to’ sweet pastry recipe (which I first shared in my Mince Pie post). I’ve never had a fail with this pastry and I love how crisp it turns out. Unlike many pastry recipes, it’s also palm-oil free as it uses coconut butter (the aroma-free/culinary kind) instead of dairy-free spread/vegan butter.

Bit of the Good Stuff Book Launch

YES, my book is about to launch! I can’t quite believe it myself but after five years work, the book is finished and will officially launch on November 9th.

I’ve been itching with excitement to do the cover reveal.

Peanut Butter Chocolate Swirl Coconut Milk Ice Cream & Vegan Life Issue 17

It was my blogging friend Aimee Ryan’s 2014 publication that got me hooked on coconut milk ice cream. I’ve always been a big lover of ice cream, but the shop-bought varieties paled into insignificance once I’d had my first taste of home-made coconut milk ice cream.

If you’ve experienced itself, you’ll know just how delicious it is. The texture is silky smooth and creamy. The coconut flavour is so subtle that the ice cream can be flavoured a myriad of ways. Aimee’s recipe book has over 50 to choose from, including fruity, nutty, spicy, boozy, floral and dessert-inspired flavours. And, in addition to being vegan (and gluten-free), her ice cream recipes also happen to be cane-sugar free too. For this, my tummy is very thankful.

Chocolate Peanut Butter Swirl Vegan Ice Cream

Coconut milk ice cream is simple to prepare and only requires a few minutes of ‘hands-on’ time. Once the ingredients have been heated, combined then chilled, it’s over to the ice cream maker to do the hard work.
